Jalapeno Poppers For Poker

You know that whenever I hold a poker game at my house I like to have fresh foods prepared for my little gamblers. But when I say fresh I mean, hot and fresh, because most men I know, do not want to eat like rabbits when we are sitting down to drink beer and play poker.

Where I come from jalapeno peppers are blessings from G-d just like poker. I can eat them plain, I can eat them stuffed with cheese, I can eat them on cheese and nachos, what ever it is, give me peppers and give me poker.


This recipe should be somewhat light on the stomachs of your poker players at your home poker game, but if someone does get a little indigestion just pull out the antacid and they will be ok.

Prep Time: 30 Minutes

Cook Time: 25 Minutes

Ready In: 55 Minutes

INGREDIENTS:

24 jalapeno peppers

1 pound sausage

2 cups all-purpose baking mix

1 (16 ounce) package Cheddar cheese, shredded

1 tablespoon crushed red pepper flakes

1 tablespoon garlic salt

1 (16 ounce) package Monterey Jack cheese, cubed

DIRECTIONS:

Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet.

Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp.

In a medium bowl, mix sausage, baking mix, Cheddar cheese, crushed red pepper, and garlic salt.

Stuff jalapenos with the Monterey Jack cheese cubes. Shape sausage mixture around the jalapenos to form balls.

Arrange jalapeno balls on the prepared baking sheet. Bake 25 minutes in the preheated oven, until lightly browned.
